Happy Birthday Rick! with a Rib-Eye Sandwich, Caramelized Onions and Arugula Blue Cheese Butter
God DAMN it. Why isn’t this a national holiday? Why don’t we ALL get the day off?
Well, because we said we wanted to throw a birthday party for any of our Pisces friends who could make us laugh, and Rick managed to do so with his answers on our questionnaire.
I don’t care. I declare a national holiday. Everybody get up. Leave work. Go straight home and make this hot mess of a sandwich in honor of Rick. It’s Friday. Haven’t you worked hard enough?
Well, if your online rebellion coupled with Rick’s love of a good rib eye is our communal excuse to ditch work and get sauced, then I am in it harder core than a Tijuana donkey show. Speaking of which, are we still taking Rick to that Tijuana donkey show?
Rib-Eye Sandwich with Caramelized Onions and Arugula Blue Cheese Butter
2 tbs. of butter
2 tbs. of olive oil
1 large red onion, thinly sliced into half moons
1/2 tsp. of sugar
1/2 tsp. of salt
pinch of black pepper
4 oz. of blue cheese
4 c. of arugula, loosely packed
4 tbs. of butter
16 oz. of rib eye steak, 1/4 in. thick and trimmed of outside fat (leave the eye intact)
1 demi loaf of ciabatta or a demi baguette
extra arugula for garnish
Warm the butter and olive oil in a skillet over medium high heat. Add the onion, sugar, salt and black pepper and let cook until onions are deeply browned and unctuously majestic. That’s right – unctuously majestic. Set aside
Put the blue cheese, arugula and butter into the food processor and blitz to smithereens. Set aside.
Now for the steak – season well on both sides with salt and pepper. Heat a grill or a grill pan over high heat and slick with a little vegetable oil (using a grill brush, of course!) Cook steak for 2 minutes on each side, or to desired doneness. As you can tell by the pic, we like our steak mooing. Rick, how do you like yours? Shit, we probably should have asked the birthday boy before we started grilling!
Let the steak chill out off the grill for 5 minutes or so to, you know, collect its thoughts. To serve, halve the ciabatta and lavishly spread both sides with the creamy arugula blue cheese butter. Make a bed of caramelized onions and place the steak on top. Add some more caramelized onions and a smattering of extra arugula. Top with the other piece of ciabatta and slice into pieces. Stick a candle in that shit and celebrate Rick with some straight up meaty goodness. Yee haw!
