Carpaccio Ala Cass
Frozen beef tenderloin sliced thin – fancy fucking sea salt and cracked black pepper
Toss arugula in olive oil, capers with juice and fresh lemon juice (or champagne vinegar)
Top with shaved pecorino romano
Eve’s add: sub sherry vinegar for lemon juice or champagne vinegar
Traditional Poke with a Spicy Eve Twist
Fresh fish of your choosing (ahi, octopus are good choices)
toss gently with sesame oil until lightly glistening. Add limu, kukui nuts, onions and Sriracha if you like it spicy.
Toss with Soy or Shoyu
If you don’t like limu, add Hawaiian sea salt, because the limu adds both texture and salt to traditional poke.
You COULD add macadamia nuts instead of kukui nuts, just be sure to use unsalted.
Cass’ add: use Ponzu instead of Soy or Shoyu.
