Dirty Dishes #17: Do It To Me Raw – Rebellious Raw Food

After Eve’s weekend adventure, we find ourselves needing to extol the virtues of raw food that aren’t veggies. Cass dishes her dirtiest secrets to the best carpaccio and Eve reveals what makes poke authentic.  We challenge your culinary minds with Urban Dictionary recipes AND Cards Against Humanity DGK Style. Because you’ve been asking, we reveal what REALLY happened to our latest secretary and why he’s been suspiciously absent. Join Eve Rillette and the vodka to her cranberry, Cassandra Wellington for another DGK episode that doesn’t try to class up the food or the talk too much.

Carpaccio Ala Cass

Frozen beef tenderloin sliced thin – fancy fucking sea salt and cracked black pepper
Toss arugula in olive oil, capers with juice and fresh lemon juice (or champagne vinegar)
Top with shaved pecorino romano

Eve’s add: sub sherry vinegar for lemon juice or champagne vinegar

Traditional Poke with a Spicy Eve Twist

Fresh fish of your choosing (ahi, octopus are good choices)
toss gently with sesame oil until lightly glistening. Add limu, kukui nuts, onions and Sriracha if you like it spicy.
Toss with Soy or Shoyu
If you don’t like limu, add Hawaiian sea salt, because the limu adds both texture and salt to traditional poke.
You COULD add macadamia nuts instead of kukui nuts, just be sure to use unsalted.

Cass’ add: use Ponzu instead of Soy or Shoyu.

Eve Rillette

Eve Rillette (pronounced “EE-ve ree-YET”) is 5’1” of hard core opinion. She’s a little bit salty and a little bit sweet, usually at the same time. Though she is better at eating out than cooking, Eve is confident that she can dominate the kitchen. Loves all food including that out of a truck and especially at a first class restaurant. Always looking for the next culinary adventure, but not really interested in eating fried bugs no matter how adventurous that makes her look. Best known as a “Piece of Work with a Foul Mouth.”
