Oh, I know! And I love that about you! If you want to use your cupcake as currency for a killer wing recipe? Well, then you are my fucking hero. Dedication is sexy.
Heroes are sexy. And so are these sweet chicken wings.
Kona Coffee Glazed Wings
1 c. of strong brewed kona coffee
1/2 c. of sherry
1/4 c. of hoisin sauce
1/2 c. of plum sauce
1/4 c. of dark soy sauce
3 scallions, chopped
4 cloves of garlic, minced
1/2 c. of cider vinegar
4 tbs. of honey
2 lbs. of chicken wings
1 tbs. of sweet chili sauce
scallions and sesame seeds for garnish
Combine coffee, sherry, hoisin, plum sauce, scallions, garlic, cider vinegar, and honey in a saucepan and bring to a boil. Simmer for at least 5 minutes and then cool.
Mix sauce with chicken and the chili sauce and then marinate the wings for at least an hour and as long as overnight.
Remove the wings from the sauce and add to a well oiled roasting pan. Cook at 400° for 15 minutes, each side or until the skin is crispy. Add sauce back to roasting pan. and broil 2-3 minutes each side.
Alternatively, for a super crispy wing, break out your deep fat fryer or wok and fill with at least 3 inches of oil. Take the wings out of the marinade and dry well with paper towels. Heat the fryer to 350° degrees and cook wings in batches until crisp and cooked through, about 10 minutes.
Regardless of how you cooked those dirty birdie wings, garnish with scallions and sesame seeds and serve.
